Lamb Curry

The curry is cooked with red onion, red tomatoes, bay leaf, green chilly, coriander seeds, cumin seeds, turmeric, black cardamom, green cardamom and nutmeg shell. All ingredients are cooked for 2 hours and blended to a fine paste.

Ontario halal lamb leg is used for cooking. The lamb fat is cooked first and taken out after an hour of slow cooking then the lamb leg is added to the curry and cooked for 1 1/2 hours. Potatoes are added to be cooked with the lamb in the finishing stages.
